Ingredients
- 1 medium cauliflower head, finely chopped
- ¼ cup chopped roasted peanuts, coarsely chopped
- ¼ cup toasted almonds, coarsely chopped
- 1 carrot, shredded
- 1 red bell pepper, thinly sliced
- ½ cup red cabbage, thinly sliced
- 4 green onions, chopped
- ½ cup chopped fresh parsley leaves
- ½ cup chopped fresh cilantro leaves
- 3 tablespoons SKIPPY® Creamy Peanut Butter
- 2 tablespoons soy sauce
- ¼ cup olive oil
- ¼ cup fresh lime juice
- 1-inch ginger piece, finely grated
- 1 tablespoon honey
Directions
- In large bowl, combine cauliflower and next 8 ingredients.
- In small bowl, whisk together peanut butter and remaining ingredients.
- Drizzle over cauliflower mixture, tossing to coat.
