Ingredients
- 4 boneless, skinless chicken breasts (1 1/2 pounds)
- 2 teaspoons ground cumin
- 1 teaspoon ground cinnamon
- 2 tablespoons olive oil
- 2 cups sliced onions
- 1 (16-ounce) jar CHI-CHIʼS® Thick & Chunky Salsa
- 1 tablespoon lemon juice
- 5 tablespoons SKIPPY® Natural Creamy Peanut Butter Spread
- 2 cloves garlic
- Fresh cilantro
Directions
- Rub chicken breasts all over with cumin and cinnamon. In large skillet, heat oil over medium-high heat; add chicken and onions. Cook, stirring frequently, until chicken is browned.
- To make sauce, in food processor bowl fitted with metal blade, process salsa, lemon juice, peanut butter and garlic until smooth. Pour sauce over chicken mixture in skillet; bring to a boil.
- Reduce heat to low; simmer 5 to 7 minutes or until chicken is no longer pink in center. Serve chicken with sauce and cilantro.
