We took one of winter’s worst quirks and made it delicious! These peanut butter meringue cookies might look like dirty snow but they taste like sweet peanut butter magic.

Ingredients
- 3 egg whites, at room temperature
- 1/4 teaspoon cream of tartar
- Pinch of salt
- 3 tablespoons powdered sugar
- 1/4 cup SKIPPY® Creamy Peanut Butter, melted
- Powdered sugar for garnish, as desired
Directions
- Heat oven to 300°F. Line 2 baking sheets with parchment paper.
- In dry bowl of stand mixer place egg whites, cream of tartar and salt. Beat until soft peaks form. Add 3 tablespoons powdered sugar. Beat until stiff peaks form. Fold in peanut butter.
- Spoon and drop cookies onto prepared baking sheets forming 36 cookies. Bake 20 minutes; turn oven off. Let cookies sit in oven 10 to 15 minutes or until dry. Remove to rack. Cool completely. Sprinkle with additional powdered sugar as desired.
