Ingredients
Noodle Salad:
- 4 ounces soba noodles
- 1 red bell pepper, thinly sliced
- 1 cup shelled edamame, cooked
- 2 large carrots, peeled and shredded
- 4 green onions, thinly sliced
- ½ cup crunchy rice noodles
Spicy peanut dressing:
- 2 tablespoons SKIPPY® Peanut Butter
- 1 tablespoon Sriracha hot sauce
- 1 tablespoon seasoned rice vinegar
- 2 tablespoons HOUSE OF TSANG® ginger-flavored soy sauce
- ¼ cup olive oil
Directions
- Cook noodles according to package instructions. Rinse under cold water and drain
- Meanwhile, in small bowl, whisk together peanut butter, Sriracha, rice vinegar and soy sauce. Gradually whisk in oil until blended.
- Divide spicy peanut dressing equally among 4 pint-sized mason jars.
- Layer soba noodles over dressing.
- Layer remaining ingredients, ending with rice noodles. Place lids on jars to seal. Refrigerate up to 3 days.
- Vigorously shake before serving or transfer to serving bowl.
