Ingredients
- 6 rice cakes
- 3/4 cup SKIPPY® Natural Creamy Peanut Butter Spread with Honey, divided
- 1/2 cup maple syrup
- 1 1/2 cups dark chocolate chips
- 1 teaspoon coconut oil
Directions
- Line a 8 x 8-inch baking dish with parchment paper.
- In medium mixing bowl, crush rice cakes into small pieces.
- Stir in 1/2 cup peanut butter and maple syrup, mixing to combine. Press mixture into prepared dish.
- In small microwave safe bowl, place chocolate chips and coconut oil. Microwave on HIGH 1 minute, stirring every 15 seconds, or until melted.
- Spread chocolate mixture evenly over rice cake layer. Freeze 1 hour.
- In small microwave safe bowl, warm remaining ¼ cup peanut butter. Drizzle over bars. Freeze 5 minutes, or until set. Cut into 9 bars
