Ingredients

  • 6 rice cakes
  • 3/4 cup SKIPPY® Natural Creamy Peanut Butter Spread with Honey, divided
  • 1/2 cup maple syrup
  • 1 1/2 cups dark chocolate chips
  • 1 teaspoon coconut oil

Directions

  1. Line a 8 x 8-inch baking dish with parchment paper.
  2. In medium mixing bowl, crush rice cakes into small pieces.
  3. Stir in 1/2 cup peanut butter and maple syrup, mixing to combine. Press mixture into prepared dish.
  4. In small microwave safe bowl, place chocolate chips and coconut oil. Microwave on HIGH 1 minute, stirring every 15 seconds, or until melted.
  5. Spread chocolate mixture evenly over rice cake layer. Freeze 1 hour.
  6. In small microwave safe bowl, warm remaining ¼ cup peanut butter. Drizzle over bars. Freeze 5 minutes, or until set. Cut into 9 bars
