Ingredients
- 1¼ cup SKIPPY® Peanut Butter, divided
- 1 cup sugar
- 1 large egg, lightly beaten
- ½ teaspoon baking soda
- ¼ teaspoon kosher salt
- ½ (8-ounce) package cream cheese, softened
- ½ cup powdered sugar
Directions
- Heat oven to 350°F.
- In large bowl, combine 1 cup peanut butter and next 4 ingredients until blended.
- Shape into 1-inch balls and place on parchment paper-lined baking sheet.
- Bake 15 minutes. Remove to wire rack to cool completely.
- In small bowl, stir together remaining ¼ cup peanut butter, cream cheese and powdered sugar until smooth.
- Spread cream cheese mixture on flat side of half the cookies. Sandwich with remaining cookies.
