Ingredients
Pasta
- 8 ounces pasta of choice, cooked and drained
- ¼ cup coconut oil, divided
- ½ cup chopped onion
- ½ cup chopped red bell pepper
- 3 garlic cloves, minced
- 1- inch slice fresh ginger, minced
- 1 (15-ounce) can coconut milk
- 1 tablespoon SKIPPY® Creamy Peanut Butter
- ½ cup (packed) fresh basil leaves, thinly sliced
- Suggested garnish: Fresh basil, red pepper flakes, chopped peanuts and lime wedges
Curry Blend Spice Mixture
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon curry powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon nutritional yeast
- 1 teaspoon dried coriander
Directions
Pasta
- In large skillet, over medium-high heat, heat 1 tablespoon coconut oil. Add onion and red bell pepper. Cook 3 to 5 minutes or until beginning to brown. Add garlic and ginger. Cook 1 minute.
- Make a well in the middle of the skillet, add remaining coconut oil and Curry Blend Spice Mixture, stirring to form a paste. Add coconut milk and peanut butter. Stir to combine. Let simmer 3 to 5 minutes. Stir in cooked pasta and sliced basil, tossing well. Serve with suggested garnish.
