Peanut-Miso Noodle Soup

Ingredients
- 1 tablespoon soy sauce
- ½ tablespoon SKIPPY® Natural Creamy Peanut Butter Spread
- ½ tablespoon white miso paste
- ½ teaspoon sesame oil
- ½ teaspoon rice vinegar
- ¼ teaspoon grated ginger
- ½ clove grated garlic
- Pinch of salt
- 1 cup hot water
- 1 serving cooked and drained somen noodles
- Suggested toppings: lime wedge, soft-boiled egg, blanched baby Bok choy, sliced firm tofu, bonito flakes, seaweed, chopped scallions
Directions
- In bowl, whisk together soy sauce, peanut butter spread, miso, sesame oil, rice vinegar, ginger, garlic and pinch of salt. Stir in hot water.
- Add noodles to soup in bowl. Top with suggested toppings.
