Ingredients
Dipping Sauce:
- 2 tablespoons SKIPPY® Creamy Natural Peanut Butter Spread
- ¼ cup seasoned rice vinegar
- 2 tablespoons HOUSE OF TSANG® Hoisin Sauce
- 2 teaspoons HOUSE OF TSANG® Soy Sauce
- 1 teaspoon Sriracha hot sauce
- 2 tablespoons water
- Garnish: chopped dry-roasted peanuts
Summer Rolls:
- 8 spring roll rice paper wrappers
- 1 cup matchstick carrots
- 1 cucumber, julienned
- 1 red bell pepper, thinly sliced
- 1 cup finely shredded cabbage (green or purple)
- 1 mango, peeled and sliced
- ½ cup fresh cilantro leaves
Directions
Dipping Sauce:
- In small bowl, combine peanut butter and remaining ingredients. Garnish with peanuts, if desired.
Summer Rolls:
- Soak wrappers according to package directions.
- Layer each wrapper with carrots and remaining ingredients. Fold ends and roll to secure.
- Cover with damp cloth and refrigerate until ready to use.
- Serve with peanut dipping sauce.
